The mojito is a classic, great for a summers day, very refreshing. I have to try them whenever I see them in a bar and as a result I’ve had some amazing ones all over... I’ve also had some terrible ones too.

I have mojitos with the mint left in, with the mint out, with sugar syrup, with hard sugar muddled in, with lemons instead of limes. The list goes on but I have taken my favourite aspects from all my "research" ;) and used it to create the best mojito recipe.

I originally grew up in the UK and moved to Australia later in life. I was working behind the bar and someone asked me for squash, for context in England we call cordial squash, so I asked if he wanted lime or raspberry. He just looked and laughed, clearly understanding the confusion and explained the difference.

This recipe calls for both lemonade and squash as I think the combination adds quite a nice contrast to only one or the other.
